On the Morricone front, I've always loved the piece "Ninna Nanna Per Adulteri" which is track 17 on the first disc of the Crime & Dissonance collection (I'm not sure what Italian Horror film it is from). I'm pretty sure the last track on disc 2 from the same collection, "Un Uomo Da Rispettare (Titoli)," isn't from either a Horror or Science Fiction film but it should be singled out for its brilliance regardless.

Definitely. I always come back to it, time and time again. At 1:30 so much happens and it says a lot, and it's lovely and powerful throughout.

As wild and crazy (and awesome) as is Herrmann's score to SISTERS, it also has some of the most beautiful and dreamy sections imaginable. The track 'Apartment House/The Windows" has one such section.

For me Christopher Young is the master on beauty in horror, I agree with all Young's choices above (Flowers in the Attic, The Fly II, Jennifer 8) and would add:

Concerto To Hell - from Drag Me To Hell
Housebound - from Copycat
Prologue - from The Dark Half
Eclipsed Heart - from Priest
The Uninvited - from The Uninvited
Hellboud Heart - from Hellraiser
Second Sight Seance - from Hellbound: Hellraiser II

I guess the argument could be made that Ridley Scott's Hannibal is a Horror film -- in a Grand Guignol sense. I love that score, and this piece in particular which is very lovely...

Absolutely, but I have to say that I love the soundtrack to Candyman 2 (also by Philip Glass) even more.

Here's Annie's Theme, one of my favorite themes in general:

EDIT:

And how could I forget Christopher Young's score for The Fly II? Howard Shore's music for the first movie was already excellent (it helps that it's obviously the better picture as well), but Young's music for the sequel remains one of my favorite scores of all time. Even compared to the Hellraiser scores he did, and even though they're a bit similar, I feel that this one is better.
Here's a compilation of the more melodic pieces of the soundtrack:

The first and last pieces on the suite (named "Come Fly With Me" and "Dad" on the album) are my favorite. Exquisite stuff.

I really love Christopher Young's score from Species-95- the theme is so dramatic and tuneful.
