Sometimes the album needs to be produced prior to final promotional artwork being approved or completed ... one example appears to be JAWS 3-D which uses a rather rudimentary rendition of the final artwork for the LP cover ...

Nothing was more preliminary than "Star Wars". White lettering on a black background!
“Preliminary” doesn't mean “minimalist.” And in this case, it's pretty obvious that it wasn't: the Star Wars logo on the LP was the version that appears in the film, not what was used to promote the film.

True. But it was the movie poster too. I don't think it was intended to be the official publicity art for the film. More than likely they just didn't have the budget left over for anything better. (Neither the poster of the album cover.) When Star Wars hit it out of the gate the Hildebrandt Brothers were contracted to make an official poster, and were given 24 (or was it 48hrs?) to get it done. They worked around the clock.
I'll never in my life understand why they used that horrible close-up picture for the Dawn Of The Planet Of The Apes soundtrack AND Blu-ray over this amazing (for this era, at least) one-sheet.
In the case of Under Fire Drew Struzan painted two versions, one for the album cover which was needed more speedily than the one sheet. In the case of the first Potter movie one of his comps was used for the soundtrack cover.

Not bad digital poster art as you said. Though only seeing the side and back of the main characters head is bad form.
