Upon re-watching "Red Dwarf", I'm reminded of two cues.
When season three opened, it opened with a long and quick Star Wars-like scroll, 'cause they skipped at least one year or more inbetween the season two finale. Howard Goodall did a good cue for the opening scroll: https://www.youtube.com/watch?v=Z9MVZo7FFFo
One of those throw-away moments in many Goldsmith scores where he takes one of his main motives and then does something completely unexpected with it (The Posse section) and turns it into a perfect 55 seconds of score.
Which Way?- from the same score is another one I love just for the flute counterpoint to the main theme that shows up in just that one place. Keep Moving too - love all these short cues because of how he mixes up the arrangements and makes great little distinctive statements.

Starting at the 0:54 mark, there is a short bit that is a favorite of mine in this clip from "Far and Away".
Another favorite is the music between the moment when Margot Kidder says "Do you like pink?" and when Christopher Reeve and Kidder take off in flight in "Superman The Movie"
