The three Music for the Movies documentaries — on Herrmann, Takemitsu, and Delerue may be a good place to start. Also, the FSM Basil Poledouris documentary. Also, The Hollywood Sound.
There is a rather bad graphic giallo movie from Mario Bava's son, Lamberto Bava called "A Blade in the Dark" from 1983 where the lead character is a film music composer. I know quite a few films that have composers or musicians in the lead role, but that one is about the only one I can think of where its an actual film composer.
