As someone who hasn't tuned in to many U.S. television series for a long time (I got fed up bothering some years ago as they often got cancelled too soon), have there been any decent sci-fi series made in recent years that give a sense of wonder from exploration or science (real or made-up)?

I've just started watching Dark Matter, and am already bored with it as it just seems to be about people conflicts.

Star Trek had a lot of what I am looking for, a continuous journey where they discover new stuff in the galaxy.

In a similar way to the Interstellar movie, I want something that can fascinate me with what might be out there...

You mention "exploration or science." I'm going to do a recommendation based upon science, and it isn't a TV show, so pardon me for the digression.

Read The Martian by Andy Weir. Many of us have recommended it on this board. Talk about SCIENCE. Yes, the movie will also be out in a few months, and if you've seen the trailer, the astronaut says something like, "If I'm to survive, I need to science the hell out of this." Yep, science as a verb.

I've never read such pragmatic and creative uses of science, especially biology.

Unfortunately, there's not a lot of choices, I'd recommend:

Television:
Star Trek: the Next Generation
Stargate: Universe
Doctor Who
Farscape (? - it may not exactly what your looking for, but I listed it anyway)
Stargate: Atlantis (good characters, lame villains)
I want to recommend Battlestar Galactica (2004) but it may not exactly meet your criteria (amazing show though).

Films:
Europa Report
Stargate
Pandorum
Sunshine
Prometheus (a heavily flawed film, but gorgeous to look at especially on Blu-ray)
