Any connoisseurs of classic rum cocktails here? I mean the vintage Trader Vic's and Don the Beachcomber recipes, using high-end and sometimes hard-to-find ingredients; not the corn-syrup-laden, parrot head beach bar swill.

I will post some of my favorite recipes here if anyone is interested.

I've become interested in both classic cocktails and classic dining after reading Peter Moruzzi's book on mid-century American restaurants: https://petermoruzzi.com/2012/07/01/moruzzis-new-classic-dining-book-available-for-pre-order/

He talks about both Trader Vic's and Don the Beachcomber's here, including a discussion of the original Zombie.

Now drinking a Shrunken Skull.

1 part fresh-squeezed lime juice
1 part grenadine - the real pomegranate stuff, not the red syrupy goop you find in cheap liquor stores
1 part Demerara rum
1 part Puerto Rican gold rum

Shake in cocktail shaker with ice. Pour into a glass over ice. If you have a shrunken skull mug, all the better.

This should probably go in the Hemingway thread but I like the concept of this thread, too.

The Papa Doble

1 1/2 ounces white rum
1/4 ounce Luxardo maraschino liqueur
1/2 ounce grapefruit juice
3/4 ounce simple syrup--I personally use 1/2 ounce
3/4 fresh lime juice

Shake ingredients and strain into chilled cocktail glass

Looks good on paper but grapefruit juice apparently magnifies the effect of some medication I take by a factor of 13, and I'd be so missed on this forum.

I usually use fresh squeezed grapefruit juice. If I don't have an actual grapefruit handy, I use the Indian River brand.

I ask because most of the classic recipes call for white grapefruit juice. Jeff Beachbum Berry, the world's leading authority on classic rum cocktails, insists on white. Trouble is, you can't find white grapefruit anymore, so your choices are either Ocean Spray white or fresh squeezed/not from concentrate red or pink.

One of my favorite cocktails is the Ancient Mariner, which I post soon. I made two identical Ancient Mariners side by side, one with Ocean Spray white and one with Natalie's fresh-squeezed pink grapefruit, hands down the best grapefruit juice I've ever had out of a bottle. The drink with Natalie's was in my opinion way better than the one with Ocean Spray white.

So much as I trust the Bum's advice, I really like some of these drinks with freshly squeezed or not-from-concentrate pink.

I have a "Calvert Party Encyclopedia", two of them actually, from 1960 and '61, straight out of the Don Draper Era. It has about 250 cocktail recipes as well as recipes for hors-d'oeuvres plus party games and things; it's a lot of fun to read, especially if one is a fan of the era. It's amusing to see what some of the ingredients these recipes call for but that was then...

My grandparents had these party guides which were probably given out free with booze purchase. Funny thing is that they got these guides and actually brought them with them when they moved to Florida in '62.

My family had a white grapefruit tree in our back yard. It bore the best fruit, I tell ya.

The Ancient Mariner

3/4 oz. fresh-squeezed lime juice
1/2 oz. fresh grapefruit juice
1/2 oz. simple syrup
1/4 oz. St. Elizabeth Allspice Dram
1 oz. Demerara rum
1 oz. dark Jamaican rum

Mix in a cocktail shaker with ice. Serve in stylish glass over crushed ice. Garnish with (clapped) mint.

This is the thinking man's tiki drink. It is rapidly becoming one of my standby rum cocktails. The allspice dram is the hardest ingredient to find; you may have to order it online or go to a high-end liquor store.

As referenced previously, this drink (and most others from this era) call for white grapefruit juice. Because white grapefruit has virtually disappeared from the planet, if you don't want to use Ocean Spray, I highly recommend fresh-squeezed pink (not red) grapefruit juice. It works just as well if not better.

I'm not going to attach the Collector Mentality to the white grapefruit issue but it is crazy that white grapefruits have gone M.I.A.

Another rather obscure ingredient I've looked for is ginger liqueur. I have some Martinique rhum agricole, which is a difficult rhum to blend but I am slowly finding cocktail options outside of the traditional Ti Punch.

The Jet Pilot:

1 ounce Jamaican dark rum
3/4 ounce Puerto Rican gold rum
3/4 ounce 151-proof Demerara rum
1/2 ounce grapefruit juice
1/2 ounce lime juice
1/2 ounce cinnamon syrup
1/2 ounce falernum
Dash of Angostura bitters
6 dashes (1/8 tsp) Pernod
4 ounces crushed ice

Blend for 5 to 10 seconds on high speed and pour into glass.

sprinkle with nutmeg and add a Cherry for garnish.

This is one of the greatest cocktails and one of the hardest to perfect. There are a number of variables, including the type of falernum used and the right amounts of Pernod and bitters.

When you get it right, it is a gem.

This is a sipping cocktail. It is VERY strong.

It is a close cousin to the Test Pilot, which I will post separately.

I mentioned over in the massively popular Mai-Kai thread that the Jet Pilot I had was rather bitter and indifferently blended, though that very well could have been the fault of my tatsing ability. Upon my return I had their "Mutiny" cocktail--three of them, old sport--and it was total love, second only to the unrequited love in terms of not disappointing me.

For this weekend, I plan the simple, unsophisticated but always deeply satisfying "Dark and Stormy":

2 ounces dark rum (I use Rhum Barbancourt Five Star)
4-5 ounces of ginger beer (I prefer the crisp bright flavor of Goya brand ginger beer)
Lime wedge (optional), squeezed and dropped into drink
Add above ingredients into a tall, chilled glass filled with ice
