To me, his most iconic is Danger: Diabolik. But that's not to say that Black Sunday, Planet of the Vampires, Black Sabbath, etc. aren't equally iconic to those who take to whatever Bava is showing us on screen. I've always loved him, but his flaws are apparent, though his influence is vast. Not unlike the great likes Howard Hawks, Orson Welles, Billy Wilder, et al. Bava is one of the greats.

Mario Bava was a bravura cinematographer before his directing credits. I remember his use of the color red in the first HERCULES, in that sequence where Hercules encounters a priestess in a temple, and she wears a red sash that's blowing in the wind. (Either I remember that correctly, or I have a vivid imagination.... LOL) Bava also enlivened the peplum HERCULES IN THE HAUNTED WORLD with his sense of color and lighting, so that now that is why the film is remembered.
