Less and less each year, but I'd still love to have (properly in some cases) on CD...
John Williams - Story Of A Woman Secret Ways, Sugarland Express, Dear Basketball (any unreleased JW really)
Michael Convertino - Aspen Extreme (plus any other unreleased Convertino) Volunteers - James Horner The Wizard Of Loneliness/Michel Colombier Date With An Angel/Randy Kerber
...and any unreleased Lee Holdridge 70s scores and other cool stuff I probably can't remember
When this topic comes up there are always folk that post lists of massive amounts of titles. Surely a Holy Grail title is one or maybe two titles that are your ‘ultimate’ wants…not just every score you’re like? I don’t remember King Arthur and his Knights on a quest to find ‘sack loads’ of Holy Grails! And in the spirit of that…….HIGHLANDER!! There can be only one
that's because it's a "release" for us to post our massive amounts of lists. We need to vent, to express our wants in our never ending quest to have a CD recording of a favorite piece of music that we heard when we were children. To complain to the powers that be, "Why hasn't this come out yet?" It also helps to know there are others out there (like us) who desperately want their favorite thirty second cue (previously unreleased) to be more publicly accessible; though few of our relatives, our colleagues, our associates care.

John Williams The Reiver’s, With the Awe inspiring, Beautiful Horse Race! John Williams The Sugarland Express. It will be released 2024…50th Anniversary. Way too important, not to.
The Complete Indiana Jones Music..We are still waiting for The Temple of Doom!
The Complete Star Wars, TESB, The Return of the Jedi.
Until I'm surprised when things like an expanded "Matinee" drop. I'd like to see more Leonard Rosenman and Alex North, but those aren't essential to me at the moment.

Now I would suspect that this will not see the light of day until Mr. Williams is no longer with us because by all accounts he seems to feel very strongly that this is not something that he wishes released.
I don’t see Universal or Mr. Spielberg wishing to overrule him while he is with us or perhaps even afterwards.
There were some very interesting releases in recent times, like MATINEE and SCARFACE, I will get both. Which is fun, because every time I think I pretty much have all the film scores I want, our specialty labels manage to yet release another CD I will get. (This has to stop, or I'll run out of shelf space. ) But "holy grails"? Nope, they've all been released.
Someone mentioned Gilligan's Island music and was wondering what would the possibility be of having Williams' score for "Gilligan's Travels" (the original pilot sans Ginger, Mary Ann and Professor Hinkley) released since it was produced not by CBS but by United Artists (there's no CBS listing anywhere on the end title). Also, the original pilot had a different theme song (more of a calypso than a sea shanty) though I'm not sure if Schwartz composed it (was definitely arranged by Williams, for flute and rhythm combo). Since only parts of the film were used for the original series (mostly scenes at the shipwrecked boat) I would imagine this might be doable (Williams' group was only 17-18 instruments recorded in a single session, with a second session, led by guitarist Bob Bain, for the theme song arrangement).
"Gilligan's Travels" (Score for the Original, Unaired* Pilot) Music Composed, Conducted and Arranged by John Williams
How 'bout it?
* - The pilot, as originally produced (with opening scenes at the marina, on the boat during the storm) has, as far as I know, never been broadcast.
