Since this question is not limited to film scores, one of my all time favorite moments of the saxophone in ANY orchestral setting occurs in THE WOODEN PRINCE by Béla Bartók, which all of a sudden features three saxophones yearning and contemplating, but never overstating their point... as great a musical (dramatic) highlighting for any instrument as I have ever heard in any composition. It is just a short musical moment.... but wow, what a moment.

I love those for what the solos contribute to the character of the respective films, as well as for the beauty of the individual performances.
