Is it just me or has there never been a release of The Man Who Knew Too Much or John Addison's Topaz?
First off, I would change the thread title. "Hitchcock" comes across as click bait.
Secondly I assume you're talking about film scores and not the actual movies.
No LP/CD release of Arthur Benjamin's original 1938 (?) score nor the 1956 remake (save for Silva re-recordings of the main title and Storm Clouds cantata).
As you mentioned John Addison, I expect you mean his Torn Curtain score. It has been released on CD.

Going back to my original premise, however, it seems odd to me that neither has been released. The latter is the only Herrmann/Hitchcock collaboration yet to be released. In terms of the former, the rejected score has been released but never the score actually used in the film.
I would think there'd be a market for both releases.
When I worked for Pioneer laserdisc corporation, I was able tp cata;pg the herrmann tracks that existed there. most of Man who knew too much was there in stereo. Trouble with Harry was all there.

Both Torn Curtain scores have been released by Varese.
Yes, both John Addison's film score and Bernard Herrmann's unused score for TORN CURTAIN have been released by Varèse Sarabande. Incidentally, I played both scores just these past few weeks.
