We had a thread on this before. Charles Bronson had some pretty impressive scores throughout his career, and a whole range of stellar composers. Same with Robert redford, Sean Connery, Ernest Borgnine Kirk Douglas, and as Damian said above Charlton Heston. Pretty much most leading actors whose careers straddled 50s/60s/70s/80s/90s because it ran in parallel with a phenomenal group of big-hitters in the composing field.
