To the obvious (for me!) albums of Zulu ... Silva & Fantastic Voyage OST releases, plus the Silva re-recording, I can add:
Zanna Bianca Alla Riscossa (plus In Nome Del Popolo Italiano) - Carlo Rustichelli; and Zenabel - Bruno Nicolai (with Ennio Morricone conducting) both on the Saimel label.
I also have two cues from the score (A) Zed & Two Noughts - Michael Nyman.
and, from vinyl, a cover version of Z - Mikis Theodorakis
Oh, and music from (The) Zoo Gang - Ken Thorne (from the Network compilation release: The Music of ITC)
No one's mentioned Zio Tom (goodbye Uncle Tom) by Riz Ortolani yet? Also, there's Andrey Tarkovsky Vol. 4, which is identified on the spine as Zerkalo/Stalker.
What about CDs starting with X? Just XTRO on vinyl for me. Wasn't some of the music from the Xena TV series released on CD?
I have to say that the movie that I immediately thought of starting with a Z was the Sean Connery sci-fi debacle "Zardoz". I don't know if the music is any good, apparently, it's only been released on lp.

I'm not aware of any real soundtrack LP for "Zardoz." There was a French 45 with two themes on it (one based on Beethoven, I believe):
And there was a David Munrow theme from "Zardoz" on a 1979 Japanese compilation LP of science fiction themes [Mu Land 7017], played by The Electoru Polyphonic Orchestra:
