It's quite an editorial mess. Perhaps the cut that Goldsmith scored will surface someday, although I'm not going to hold my breath for that.
I would strongly advise against that, yes. Given how the release of the theatrical cut was handled, and the general lackluster response to it, it seems unlikely that any niche company would bother, or if they did, that there would be much to find.
You know, there was this kids' film, animated, in the early to mid-90s, I can't remember the name except that it wasn't Cat's Don't Dance, but it did so terribly on its opening weekend, that the film company told all theaters that they "may keep the print" because they didn't even want to pay to ship them back and deal with the materials. All these theaters had their own copies of this one kids' film sitting in dusty corners of their booths.
A kind of that mentality could apply to Lionheart materials.

Though, for what it's worth, with the exception of The Dress, all of the large chunks of dialed out parts of cues, pulled back in where they would be if the existing cue in the film was simply not truncated, work really well where they would have been. So, you know, if you have even a cheap or free barebones editing program, that much of it is kind of easy-peasy, and those scenes play better, to a one.
